Garlic Truffle Chickpeas

If you’re looking for a super quick and healthy snack before or after lunch, give this chickpea recipe a go. I was craving something salty and moorish the other day, and these Garlic Truffle Chickpeas were the perfect thing to squash those cravings.
Chickpea Lover
I absolutely love chickpeas. I never would have thought I’d be the person to end up loving the humble chickpea, but I remember when we were kids we used to eat chickpeas at our grandparents house. It’s always a challenge remembering the details, but I do remember they were dried somehow. I’ll have to chat to my sister to see if she can remember.
Truffle Oil Is A Staple
Truffle Oil has become a staple in my house, I love the intensity of the flavour and the fact that a bottle lasts forever, as you never need much. I use it in all kinds of things but love drizzling it over my Vegan Chick’n and Mushroom Risotto. The flavour really brings out the mushrooms in the dish. So good.
You could make these Garlic and Truffle Chickpeas without the Truffle Oil, and replace for another flavoured oil. If you do, let me know what you try in the comments.
How quick is quick?
It seriously takes me under a minute to make these Garlic and Truffle Chickpeas. All of my spices and herbs are sitting right there in front of me on my kitchen bench, so the only thing I need to go to the pantry for is the chickpeas. I usually make a batch of this and keep it in the fridge, and attack it whenever I feel peckish. The tiny amount of truffle oil makes it super healthy too, a 125g serve only has 200 calories. Perfect snack material.
Spice It Up
I love to add some quality Sriracha sauce if I’m in the mood for something spicy. The other day I had a delivery from Chef Na so I now have plenty of Sriracha for a while. It’s got a lovely sweetness and I can definitely see myself buying more. I’ll throw a review up soon for a few of their products, as everything I’ve tried so far has been really tasty.
Garlic Truffle Chickpeas
Ingredients
- 250 g Cooked Chickpeas Or straight from the can like I do them
- 1 tsp Truffle Oil
- 1/2 tsp Garlic Powder
- 1/4 tsp Salt
- 1/2 tsp Dried Thyme Leaves
- 1/2 tbsp Nutritional Yeast Flakes
- 1 tsp Lemon Juice Or Lime Juice
- Cracked Black Pepper
Instructions
- This really is a two step recipe. Start by draining and rinsing your chickpeas.
- Combine all ingredients in a bowl, toss together, and enjoy.
