Roasted Broccoli Sun-Dried Tomato Toast

I absolutely love roasted broccoli, so why not have it on this Roasted Broccoli Toast! I have to admit though that broccoli any other way really bores me these days. I was training pretty hard at the gym a few years ago and the diet was pretty much chicken and broccoli every, single, day! You know when you eat something too much and it becomes really hard to eat? That’s what happened. But when I started roasting it with garlic salt and olive oil, all of that changed. It comes to life and has re sparked my love for broccoli.

Roasted cauliflower is the other true love, but that just wouldn’t look as tasty on this beautiful breakfast dish. The pine nuts add some extra crunchy texture and there’s so much hummus left over I’ll be slathering it on bread and corn chips for days.

I’ve only just started using the oven more in recent months. Before going vegan I was so used to throwing some meat and veg on the stove that I didn’t really consider how versatile the oven is. I can’t get enough of baking and roasting these days and love getting the oven cranked up in winter months. Now if someone could come and clean it for me, that’d be great 😉

The only thing wrong with this Roasted Broccoli Toast recipe is that I now have a huge loaf of bread in the house. This is extremely dangerous as anyone with a hardcore addition to carbs will testify to. Bring on the self control. Off to make some room in the freezer now.

Roasted Broccoli Toast with Sun-dried Tomato Hummus

Toast with a bed of sun-dried tomato hummus topped with roasted broccoli and pine nuts.

Servings 4 pieces


Broccoli Toast

  • 1 whole Broccoli Cut into small florets
  • 1/4 cup Olive Oil This seems like a lot but I like them crispy, you can cut this down if you like
  • 1/2 tsp Garlic Salt
  • 1/2 tsp Ground Black Pepper
  • 10 grams Pine Nuts toasted
  • 4 slices Quality grain bread or sourdough

Sun-dried Tomato Hummus

  • 1 can Chickpeas drained and rinsed
  • 1/4 cup Tahini
  • 1/2 cup Sun-dried tomatoes If using oiled, drained.
  • 1/4 cup Olive Oil
  • 1 clove Garlic
  • 1 1/2 tsp Tomato Paste
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1/2 Lemon Juiced
  • 1/4 cup Water


Broccoli Toast

  • Preheat oven to 200 degrees Celsius
  • Cut the broccoli into small florets and toss with oil, garlic salt and pepper.
  • Lay out on a baking tray evenly spaced and cook in preheated oven for 10 to 12 minutes until nicely browned.
  • Toast pine nuts in a frying pan on medium heat for a couple of minutes, tossing regularly, until browned.
  • Toast bread and allow to cool slightly before topping with hummus (recipe below), broccoli and pine nuts.

Sun-dried Tomato Hummus

  • In a food processor add all of the sun-dried tomato hummus ingredients except the water and pulse to blitz and combine.
  • Add water gradually until you get a thick pasty consistency. If you like it softer, add more water until you get your desired taste.
  • You will end up with quite a bit left over, keep for dipping delicious corn chips or toast into later.
