Roasted Broccoli Toast with Sun-dried Tomato Hummus

Toast with a bed of sun-dried tomato hummus topped with roasted broccoli and pine nuts.

Ingredients

Broccoli Toast

  • 1 whole Broccoli Cut into small florets
  • 1/4 cup Olive Oil This seems like a lot but I like them crispy, you can cut this down if you like
  • 1/2 tsp Garlic Salt
  • 1/2 tsp Ground Black Pepper
  • 10 grams Pine Nuts toasted
  • 4 slices Quality grain bread or sourdough

Sun-dried Tomato Hummus

  • 1 can Chickpeas drained and rinsed
  • 1/4 cup Tahini
  • 1/2 cup Sun-dried tomatoes If using oiled, drained.
  • 1/4 cup Olive Oil
  • 1 clove Garlic
  • 1 1/2 tsp Tomato Paste
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1/2 Lemon Juiced
  • 1/4 cup Water

Instructions

Broccoli Toast

  • Preheat oven to 200 degrees Celsius
  • Cut the broccoli into small florets and toss with oil, garlic salt and pepper.
  • Lay out on a baking tray evenly spaced and cook in preheated oven for 10 to 12 minutes until nicely browned.
  • Toast pine nuts in a frying pan on medium heat for a couple of minutes, tossing regularly, until browned.
  • Toast bread and allow to cool slightly before topping with hummus (recipe below), broccoli and pine nuts.

Sun-dried Tomato Hummus

  • In a food processor add all of the sun-dried tomato hummus ingredients except the water and pulse to blitz and combine.
  • Add water gradually until you get a thick pasty consistency. If you like it softer, add more water until you get your desired taste.
  • You will end up with quite a bit left over, keep for dipping delicious corn chips or toast into later.
